I could eat was 1. I guess it is a form of portion control. Muffins are not low carb. |

Sprinkle a litle bit of the chopped nuts on top of each muffin, and bake 25-30 minutes until muffins are golden and the tops spring back to the touch. Enjoy. Makes a dozen muffins. Each muffin has 3g carbs and 1g fiber, 19g protein, and 260 calories. Coconut-Almond Muffins from Don Wiss 1 cup almond butter 1 cup sliced almonds 1 cup pure coconut milk 2 cups shredded unsweetened coconut 3 eggs (1 tsp. vanilla, optional, not in original recipe) Beat well and pour in greased muffin cups or papers. Bake at 400 for 15 minutes. Makes one dozen muffins.
