Umm, where did I write that you did write all? What I wrote was-Just wanted
to remind you that most doesn't mean all. IOW, it's a blanket statement
that doesn't apply to SOME of us here. So why can't we have muffin recipes?
I shouldn't have a glass of wine sometimes, because some people who drink
can't stop at one?

They may not be the lowest of low carb things but they tasted bad enough all
I could eat was 1. I guess it is a form of portion control.


Muffins are not low carb.

You'll notice the muffins don't contain sweetener. I eat them with
butter and a little sprinkle of Splenda. They must be refrigerated
after they cool, because moist muffins without sugar will get moldy
very quickly.


Blueberry Muffins from Debbie Cusick

1 cup ground nut meal (I use pecan)
1 cup protein powder (whey or egg)
3 large eggs
1 tsp salt
1 tbsp baking powder
1 cup heavy cream
1/2 cup seltzer water
1/2 cup blueberries
1/4 cup chopped nuts

Preheat oven to 350 degrees F.
Drop one teaspoon of oil into each cup of a 12-cup muffin pan.
Put all ingredients except for the blueberries and chopped nuts
into a large bowl. Beat all ingredients for 1-2 minutes using
an electric mixer. Fold the blueberries in by hand. Pour into
muffin cups. Sprinkle a litle bit of the chopped nuts on top of
each muffin, and bake 25-30 minutes until muffins are golden
and the tops spring back to the touch. Enjoy.
Makes a dozen muffins. Each muffin has 3g carbs and 1g fiber,
19g protein, and 260 calories.


Coconut-Almond Muffins from Don Wiss

1 cup almond butter
1 cup sliced almonds
1 cup pure coconut milk
2 cups shredded unsweetened coconut
3 eggs
(1 tsp. vanilla, optional, not in original recipe)

Beat well and pour in greased muffin cups or papers.
Bake at 400 for 15 minutes.
Makes one dozen muffins.

(Debbies variation of Don's recipe used 1 cup coconut, with a posted
carb count of 6g carbs, 2g fiber, 6g protein and 236 calories per
muffin)

Oh sure, my posts cause other people's overeating. Right.
I wonder how many newbies were discouraged from even starting LC
by your assholier than thou FFID posts.

I could set up an automatic posting utility for you, that would respond
to every post in ASDLC with "X is not low-carb. Eating anything that
isn't on the JC-approved Atkins' Induction list will keep you a fat
**** forever." It would save you endless time with almost no impact
on the relevance of your posts, and you could post your occasional
helpful exercise post in only a few seconds a day.

The sad thing is that even though it tasted bad, you ate the whole thing.

Why not take a few bites, decide it tastes like crap, and then toss it?
