DH made this tonight, based loosely on a recipe from the Sopranos
Family Cookbook. We used to love the Ricotta-Pineapple pie, so he
made just the filling, without the pineapple or the piecrust. It
turned out pretty well!

Baked Ricotta Dessert

1/2 Cup Splenda, Granular
2 Tablespoons Cornstarch
15 Ounces Ricotta Cheese, Part Skim Milk
2 Large Egg
1/2 Cup Fat Free Half-and-half -- Land O'Lakes
1 Teaspoon Grated Lemon Peel
1 Teaspoon Vanilla Extract

Preheat oven to 350 F.

In a large bowl, stir together the splenda and cornstarch. Add the
ricotta, eggs, cream, lemon zest and vanilla, and beat until smooth.
Pour
the mixture into six Pyrex dessert cups (half cup size).

Place cups in a 13 x 9 pan, filled with approx. an inch of water (this
helps the dessert cook evenly). Bake in oven for 50 minutes or until
done. Cool to room temperature, then refrigerate until chilled.

Optional: Top with fresh berries and whipped cream

Can I leave out the cornstarch?

Also use full fat on half anf half ..

Sounds great. I agree aboutusing the full fat ricotta vs. skim and using
regular half and half instead of fat free--no comparison. Also, I think Land o
Lakes free half and half
has corn syrup and other additives if I remember, which would put the carb
counts up. I always wondered how they could call a product that's supposed to
have cream "fat free" anyway! Anyway, can't wait to try this, thanks for
sharing it.
