Recipe: My Favorite Salad
I don't know what to call it, and I'm probably not the first to try
this combination but here's what I like in my "Bazooka-Joe Special": Lettuce (5 cups romain and iceberg) Mushrooms (1/2 cup) 4 Chopped Pickled Asparagus 1 whole Artichoke Heart 1 small Tomato 1/4 cup Diced Onion 2oz. Diced Deli Virginia Ham (can substitute grilled chicken) 1 Chopped Hardboiled Egg Optional: mandarine orange slices, pineapple chunks, apple slices, carrots 1/4 cup Home made Italian Vinagrette (2 tbsp=10 calories, 0g fat) Can't usually finish the whole thing, but it only takes 5 minutes to make. :Bazooka-Joe |

Lettuce is not always at its best at this time of year in the UK, so here's my winter side salad: 1/4 cucumber, quartered and sliced 1 small courgette (zucchini) sliced 3-4 mushrooms, sliced 2 large tomatoes, chopped a stick of celery, sliced an apple, chopped half a red pepper (capsicum) chopped 1 carrot, sliced a drizzle of olive oil and a splash of Balsamic Vinegar some fresh basil if you have it. DH and I usually have this with a round (or two for him!) of 3-4 point sandwiches. I often make mine with two slices of wholemeal bread, s dollop of extra light Philadelphia cheese, and a half point slice of lean ham. Sometimes the vegetables vary a bit according to what we have in at the time. Cabbage is a good addition too, especially red cabbage. The salad will keep a day or two in the fridge if you leave the dressing off.
