Home made sausage REC. Others welcome!
Below is an easy recipe for Chorizo. I bought a pork butt for .89 a pound
and went to town. I enjoy making my own because there is no junk in it and it is easy and cheap. Anyone else have any favorite recipes to share for homemade sausage? I would like to make one with fennel or anise involved sometime. Curt likes his sausage spicy. Enjoy, Curt 5 lb fresh pork 3 1/2 tsp salt 3 tbsp chili powder 1 clove garlic, mashed 5 tbsp vinegar 1/4 cup paprika 1 1/2 tsp pepper 3/4 tsp oregano 3/4 tsp thyme 1/4 cup dry wine (optional) With electric food grinder, coarsely grind pork. Add all of the above ingredients and with hands, mix together until well blended in. Press into thin patties. Freeze in handi-wrap in single servings. Made 22 patties. -- Started low carb May '03 211/183/185 . . 6'2" Highest weight 250 |

Thanks for the recipe! I love sausage but I can't seem to find a good brand that doesn't have alot of crap in it, especially sugar in some form or another. I'll give this a try, seems relatively easy. Monica Your welcome. I don't know if people realize how easy it is. If you don't have a food grinder, just buy ground pork or have the butcher grind some. I love having all those cool little patties in the freezer. No junk in them and better tasting. Glad someone is into it. Curt |

Curt, looks grrrrrrrrreat. I love sausage. Here's mine for Hot Italian. It's
a restaurant quantity rec. so you need to adjust for quantity or make a lot and freeze it. 10#'s pork (Butt is a good choice. Grind medium) 4 Tbls. kosher salt 2 Tbls. splenda (used to be sugar) 3 Tbls. fennel seed 2 tsp. Anise seed 20 cloves garlic, minced 2 Tbls. chili flakes 1 c white wine 1 c red wine Mix it all together well. Hope you enjoy. I plan on trying yours soon this weekend. Does it have to be kosher salt? I don't think kosher salt is going to

Hmmm, I would love your lamb sausage recipe. What is Siena and Tuscan and
Longaniza? Is it a problem to give me all of them. I hate to ask, but I am going on a sausage kick. I really enjoy it and think it can be pretty good for you if you make it right.
