.... when vinegar tastes too sweet!

Really, it does. Got some balsamic vinegar, didn't read the label close
enough. Contains grape juice, 1 g of sugar per tablespoon....

Every Balsamic vinegar I've ever had has been sweet. I could be wrong, but
I think thats kind of a defining quality of them. True balsamics are made
by boiling grapes to a syrup and then aged. The flavores will be very
concentrated. Good balsamics are expensive. Cheaper ones will add sugars
of some type to try to taste like the better ones.

Every Balsamic vinegar I've ever had has been sweet. I could be wrong, but

IMHO If your carbs are very low, several grams of sugar is harmless.

Yes, and who's going to have a whole tablespoon of vinegar at once anyway?

Actually I was thinking of mixing it with non-alcoholic wine or something.
I've been enjoying real red wine, merlot and such, at dinner lately, the
acid is good for my stomach, but it's expensive and I'm a bit nervous about
making it a habit (came from a very strict teetotal family).

I used to mix cranberry concentrate and cherry concentrate and water for a
sort of wine equivalent, but the cherry would be quite carby (and perhaps
the cranberry too). Hm, maybe I should add cranberry to the vinegar.

Balsamic vinegar is supposed to be sweet. You can make your own much less
expensive substitute by mixing sugar with red wine vinegar.

That would be sorta like eating a really tough cut of beef smothered
in MSG because you don't want to spend the cash on tenderloin.

Nothing compares to good balsamic vinegar - i readily admit that I'm a
snob in that department.

I agree with you if you're going to use it in a salad or something where
you'll taste the vinegar. The OP was surprised that it was sweet and I was
only pointing out that you can make a substitute if you need a less
expensive one. I do this when a recipe calls for 1 or 2 tablespoons of
Balsamic vinegar in a gravy or sauce where you won't really be able to
taste it and I don't have any in the house. :-)

Gosh, that's an expensive passtime! How about cider or wine vinegar? We used
to enjoy it as a very dilute drink as kids.

when i am making a big big big big salad i'd use quite a few tablespoon of
balsamic vinegar...
