Low-Carb Leftover Turkey Breast?
Yesterday we grill-roasted one of several turkey breasts (bone in) that I picked up on sale recently. It was delicious but now I am unsure what to make with the leftovers since my former repertoire of leftover turkey recipes is not exactly on the low-carb agenda. Ideas anyone, please? |

Low-Carb Leftover Turkey Breast?
Use it anywhere you'd use cooked chicken. I make turkey salad for my
lunches. Just dice up the meat and add diced celery, sliced green onions and a little grated carrot. How about slicing it and wrapping it around a pieceof ham and cheese, then microwaving it to warm it up and melt the cheese. Sort of a Turkey Cordon Bleu. Make a cream of turkey soup? A low-carb version would be to skip the pasta, and make the main cream sauce out of sour and heavy creams instead of using flour. This is what I'd try. Note this is an *untested* recipe... 1 TB butter 1/4 medium onion, sliced thinly 1/2 lb turkey meat, cubed 1 can mushrooms, drained 1/4 cup sour cream 1 oz heavy cream Fry the onion in the butter, stir in the mushrooms and turkey and heat through. Mix in the sour cream and heat gently (do not let boil). Thin with heavy cream if needed (alternatively, you might thin with sherry). This would be 2-4 servings, depending on what you had with it (I think it'd be very rich and therefore the smaller servings with a sald and veggies would be better than a big serving). If made with dark meat (we never have leftover white meat here - it is rapidly sandwiched), the total recipe would be 11.5 g carb, 37.5 g protein, and just under 600 calories. |

You could us it as a filling inside a LC tortilla...you can use it in an omlete, or you can just nuke one and put it on a plate...just use your imagination and let your hunger take you some place |
