REC: Cherry Tomato & Olive Salad
This was in a local paper here in NZ. Makes a great Low carb salad and nice enough for
Lunch on its own Cherry Tomato & Black Olive Salad 2 Tbs Extra Virgin Olive Oil 1 or 2 Tbs of Lemon Juice Few Pinches of salt (Maldon if U have it) Fresh Ground Black Pepper I minced clove of Garlic (more is good smile) Generous Cup of good Black Olives (Kalamata if you can) stones in is OK as they are usually better olives 350 g of Cherry Tomatoes, rinsed dried and halved 1/2 cup of Pine Nuts toasted to brown, not burnt Handful(s) of fresh basil Leaves Mix Olive Oil, Lemon juice, S&P and garlic in a bowl. Add Olives and tomatoes and toss well. Add the pine nuts and Basil Serve immediately. Any leftovers will keep a day in the fridge , so you may like to double the above.
