cauliflower mashed potatoes

Default cauliflower mashed potatoes

I made the mashed potato recipe made with cauliflower after hearing all the
raves about it. I really did not like it! To me, it tasted like mushed up
cauliflower. Did anyone else not like it?

I liked it allot, but I love veggies of all types.

Did you drain it completely? I also make mine with creamed cheese.

How did you make yours?

I think it depends what you put into it. My wife mixed in some cream & butter (to make it
smoother & add yummy fat :-) ), and it came out as an amazingly realistic simulation of
mashed potatoes.

Default cauliflower mashed potatoes

We love it at our house --

I use lots of butter, about 2 oz. cream cheese and a bit of heavy whipping
cream. The drier the cauliflower is to start, the better. It's also good to
make as a topping for a casserole like Shepherd's pie or to just bake it a
little with some cheese on top.

We made it as part of our Thanksgiving Dinner. I steamed 2 heads in the
microwave, added about a quarter cup of half and half, 1 tsp salt, 1/2 tsp
pepper and a few garlic cloves. Although everyone loved it, the garlic was
too strong. Next time I will use roasted garlic instead of raw.

We took mashed cauliflower to our church dinner and everyone commented on
how good it tasted. You have to steam it in as little water as possible.
That is he only way to keep it firm enough to be call mashed not soup.

I liked it a lot, even though I don't even like cauliflower. I
made mine just the way I like baked potatoes--with butter, sour
cream, salt, pepper, and garlic powder--plus some bacon bits (real
bacon), and sometimes some cheese. Maybe your version was plainer
and didn't camouflage the cauliflower as well.

Debra,
Try adding a little chicken broth if you didn't. It "tames" the
cauliflower taste a bit. My wife, who is not lo-carb even likes them.
