I nuke mine with just a tad of water--covered, ca 2.45 minutes in
a 1250-watt microwave. Frequently there is no water to drain.
Others nuke theirs with NO water.

Default cauliflower mashed potatoes

We made it as part of our Thanksgiving Dinner. I steamed 2 heads in the
microwave, added about a quarter cup of half and half, 1 tsp salt, 1/2 tsp
pepper and a few garlic cloves. Although everyone loved it, the garlic was
too strong. Next time I will use roasted garlic instead of raw.

We put the garlic cloves right in with the cauliflower to steam. Yummy. You can
add me to the list of those who LOVE mashed cauliflower.

Oh course, I love cauliflower, and I am another one of the
"yippee! mashed cauliflower, yum yum" crowd, so this may not
be much help.

First of all, I've tried every technique known to man
(including our Zen Master Pastorio), but frozen cauliflower
tastes disgusting, mashed or otherwise. Yuck.

Second of all, the cream cheese is crucial, as is black pepper.

Third of all, getting as much water out as possible also
contributes to a more pleasing result. I've been mashing the
boiled cauliflower, then putting it into a colander lined with
cheesecloth and squishing the extra water out, then adding it
back into the hot pot to drive off more moisture while I
continue mashing and seasoning.

Fourth of all, you may just never like mashed cauliflower.
That's okay: there's a whole yummy vegetable world out there
ready for your exploration. Have you tried fried cabbage
yet? Yum. It's my favorite noodle substitute for spaghetti.

You also need to put it in a blender to make it really smooth. Here's
recipe I use that I found on he

1 Head cauliflower
1 1/2 tsp chicken bullion
1/2 tsp pepper
1/2 tsp salt
2 tsp dry minced onion
2 tbsp butter
about 2 tbsp cream, use to adjust to correct consistency

Boil caul till well done, then drain very well, and mash. Combine
with other ingredients, and use a blender. Place in baking dish,
sprinkle with paprika, put in 375 oven for 15-20 mins. I also like it
with some parmesan cheese mixed in.

Everyone who has tasted mine has loved it. I don't add any liquid to
the recipe. I just steam a bag of frozen cauliflower (I've tried
fresh as well, without any noticeable difference) and toss it into a
food processor with butter, some chicken bouillane, and salt. Blend
till smooth, but not too smooth. Tastes great! I've fooled people
who thought it was potatoes.

Debra - I made it for dinner one evening so excited to find something
close to mashed potatoes. But, alas, we all thought it was awful. I
was very sad. (Note - we don't like plain cauliflower, either.)
BUT, my neighbors liked it so I gave them the bowlful!

Question: Since it's mashed cauliflower, why is it not call it mashed
cauliflower? I don't understand calling it anything other than what it
is. Thoughts?

If you do it in the mike, that whole water issue vanishes. Nuke
covered, with no water added. Season and nuke. Period. The cauli will
throw off a bit of moisture and you can dump that and add cream and
butter and it'll still be more dense than boiling or steaming permits.
