say hello. I also found a recipe on here a few days ago for Chipotle Chicken
Soup....would anybody still have that? I accidently deleted it and cant
figure out how to get it back. lol
Anyway, I have been in Weight Watchers a whole 3 weeks now. Seems to be
working well for me.

This looked good to me, too, although I haven't tried it. I did save
it, though... Stan

Chipotle Chicken Soup
Serves 6

2 boneless, skinless chicken breast halves, cut into 1" pieces
1 can fat-free chicken broth
2 cups water
2 cups tomatoes, diced
1 cup green pepper, diced
1 cup onion, diced
1/4 cup long-grain white rice, uncooked
3 cloves garlic, minced
2 chipotle chilies canned in adobo, chopped
1/2 tsp. salt
1/2 tsp. pepper
2 bay leaves

Combine all ingredients in a 3 qt. or larger stock pot. Heat to
boiling, cover and simmer until rice and chicken are tender. To serve
top with a spoon of sour cream if desired. Enjoy!


Per Serving:
Calories: 137
Fat: 1 g
Fiber: 2 g

I don't remember who posted this originally but it's one of the few that
I've saved. One of my daughters is visiting me next weekend and I intend
to try this recipe on her. Her boyfriend's on WW and they're always
looking for good, inexpensive, low cost meals. This one looks like a keeper.

Chipotle Chicken Soup

Serves 6

2 boneless, skinless chicken breast halves, cut into 1" pieces
1 can fat-free chicken broth
2 cups water
2 cups tomatoes, diced
1 cup green pepper, diced
1 cup onion, diced
1/4 cup long-grain white rice, uncooked

Thanks Stan, I am new to the newsgroups, so I have not figured out how to do
things too well yet. Be patient with me! This recipe sounds wonderful. My
husband love chipotle chilies, so I am going to try it out on him when he
comes home.

Welcome Cathy! Can't help you with the recipe, but if no-one posts it, try
looking it up via Google. Go to newsgroups, type in chicken chipotle soup
and let Google search in ASDWW. It should show you the recipe then.

Hi Cathy,
Welcome to the group, you'll like it here. I posted that recipe, although
it sounds kind of different, it's actually quite good. I see Stan has
posted it again for you, so enjoy! The original recipe called for 1/2 cup
or garbanzo beans too, but I decided not to put them in, and I'm glad I
didn't as I think it's probably better without them. Look forward to
hearing more from you.

If your husband likes chipotle chiles, he'll like this soup. I made it last
weekend, then used it for my lunches during the week. Thought it was so
good I had to share it with the ng. Hope you enjoy it. Oh, do the sour
cream thing, makes all the difference!
