Any one have an easy recipe for one of those egg bakes--for something like a
crustless quiche with eggs, ham and cheese?

My favorite is as follows (I adjust ingredients as desired, mixing different
meats and cheeses)

Spray bottom of 9 inch deep dish pie pan with cooking spray. Sprinkle meat
of your choice (amount you desire) and cheese (what ever kind you like). Set
aside.

In Sauce pan:
2 oz cream cheese
1 tbsp butter
2 green onions chopped
Saute in sauce pan over medium heat. Stir in:

1 cup half and half
3 eggs beaten
Heat but do not boil, mix well.

Pour mixture over meat and cheese mixture. Bake in 375 degree F oven for
about 35 minutes or until knife inserted in center comes out clean.

I often take this to work for lunch or have it for breakfast. My favorite is
ham and bacon with a blend of cheddar and swiss cheese, but it's so flexible
you can do anything you like. I also use this with shrimp and crab.

Just pulled one out of the oven 10 minutes ago.

I make them in muffin tins and eat them for breakfast all week.

Mine is the base, you can add whatever veggies/meat you like.

1pkg (the square frozen kind) chopped spinach, thawed and SQUEEZED clear
of all water
1 16 oz container ricotta cheese
3 eggs
8 oz shredded cheese (I used Mozzarella, but you can use whatever you like)

Beat the eggs, add the ricotta and mix until smooth. Add salt, pepper
and garlic powder to your liking.

Crumble in spinach, mix well.

Add in cheese, mix again.

Now... you're at the point you can customize. Add in cooked and cooled
ham, bacon, sausage, whatever meat you like. And whatever sautéed and
cooled veggies you want.

It's really great. You can add feta and cooked lamb for a Greek feel.
Or Pepper jack and ground beef for southwestern. Or Ham and
swiss/guyere for a quiche. Or mozzarella, italian sausage and peppers.
Or even shrimp.

Pour into greased pie plate or muffin tins. Bake a 350 for 45 minutes
or until golden on top and a knife comes out reasonably clean.

Absolutely!

Ham and Swiss Cheese Quiche

6 large eggs
½ cup heavy whipping cream
1¼ tsp. garlic salt
¼ tsp. black pepper
1/8 tsp. cayenne pepper (optional)
4 oz. grated Swiss cheese
13 oz. ham (sliced thinly like deli meat, then diced)
1 medium sweet red pepper, diced

Preheat oven to 350°. In a medium size mixing bowl, add eggs, cream,
garlic salt, black pepper, and cayenne pepper and mix well. In a glass
pie dish spread ham on bottom, then spread the cheese, then the red
bell pepper. Then pour the egg mixture on top. Bake in preheated 350°
oven for 1 hour. Test for doneness by sticking a wood tester or
toothpick into center, if done, should come out dry. Let stand for 15
minutes before cutting and serving.

This is one of my favorites! I often make 4 or more quiches at a time,
slice in quarters, and freeze the slices to heat up for a really fast
(but so yummy) breakfast. Or lunch. Or dinner. Or snack. :-D

Squash and Green Chile Frittata

INGREDIENTS

a.. 6 large eggs
b.. 1/4 cup half and half
c.. 2 teaspoons salt
d.. 2 tablespoons olive oil
e.. 1/2 onion, diced
f.. 2 garlic cloves, minced
g.. 1 zucchini squash, cleaned and diced
h.. 1 bell pepper, roasted, seeded & diced
i.. 1 poblano pepper, roasted & diced
j.. 1/2 cup grated Monterrey Jack or Cheddar cheese
PREPARATION
1.. Preheat oven to 350 degrees.
2.. In a mixing bowl, whisk together the eggs, half and half and 2
teaspoons of salt. Set aside.
3.. In a 12 inch non-stick pan, heat the olive oil until lightly smoking.
Add the onion and sauté for 2 minutes.
4.. Add the garlic, zucchini, poblano, and bell pepper and sauté for 3
minutes longer. Season with salt.
5.. Add the egg mixture to the pan, stirring to combine eggs with the
vegetables.
6.. Let cook, undisturbed, for 20 seconds.
7.. Stir the pan one more time and tilt it to let the uncooked egg mixture
cover where the cooked parts have come away from the pan.
8.. Sprinkle the cheese over the top and place on the middle rack of the
oven.
9.. Cook for 5 minutes, or until the top is golden brown and is puffed up
slightly.
10.. Remove the pan from the oven and shake vigorously to loosen the
frittata (alternatively, carefully loosen on one side and slide a spatula
underneath to remove).
11.. Slide the frittata onto a warm serving plate and cut like a pizza.
12.. Serve immediately with the Tomatillo-Serrano salsa.

I call this Egg Pie

1 small onion, sliced in thin rings
1/2 green pepper, diced
1/2 red pepper diced
2 cups sliced button mushrooms
6 eggs
1/2 cup cream
2 cups grated hard cheese
olive oil and butter
salt & pepper

Melt some butter in some olive oil. Over medium heat, saute
the onion, peppers, and mushrooms until the mushrooms have
given up all their moisture. Stir frequently to prevent
scorching.

While the vegs are sizzling away, whisk the eggs, cream and
salt & pepper together.

Heat oven to 350 F. Grease a glass pie plate with a thin
film of olive oil. Pour enough of the egg mixture into the
pie plate to cover the whole bottom (probably one to two eggs'
worth of liquid). Sprinkle liberally with half of the cheese.
Pour the reduced veggies, oil & all, in on top and spread
them around. Sprinkle with remaining cheese. Pour remaining
egg mixture evenly over the top.

Place in oven and bake for at least 20 minutes - maybe half
and hour (I don't like wiggly eggs). It will puff, but deflate
when removed from the oven. Let it sit for ten minutes before
serving it.

This is suitable for me & my vegetarian SOGP, but could easily
have crumbled cooked bacon or diced cooked ham or crumbled
cooked sausage added to it. The veg mixture could have grated,
squeezed zucchini added to it and cooked . I also like to add
about two teaspoons of crumbled dried thyme leaf to the egg
mixture - but that will depend on your taste.

It makes four supper-sized servings.

Love to try this recipe but could some translate 'half and half' for me?
Over here in England 'half and half' is a type of beer drink. Not sure what
it is half and half of but I know one buys it in a pub! Still, might make
the recipe interesting!

Half and Half is what we call a table cream consisting of half milk
and half cream.

It's a light cream of around 10% milkfat.
