Sweet Chicken
I made a big pot of chicken soup last night. Once the aroma started to
permeate the house, and whenever I tasted the chicken, I was struck very strongly by a sweet aroma. I kept thinking it was reminiscent of vanilla, but eventually realized that it smelled VERY MUCH like CORNBREAD! I used chicken wings, onion, celery, garlic, zucchini, cabbage, chicken buillon and mushrooms. I'm pretty sure it's the chicken itself that is the source of this tantilizing aroma. I'm not complaining -- it smells GREAT -- but it just seems so ODD to me that I'm wondering if others have experienced this. Is this what REALLY fresh chicken is like (I have no idea how fresh it was other than I bought 2 packages of Foster Farms wings at the grocery store last night). BTW, I was watching the Ellen Degeneres show a week or two when one of her guests was a chef. SHE was the one who suggested using chicken wings to make chicken soup since there are more bones that way and the marrow in the BONES is what makes it really flavorful. Apparently you cooked it right . I tend to do a whole chicken on the rotisserie, or chicken parts in the slow cooker, but that's just me. The best cooks don't need as many appliances, I think.
