Default Two good recipes for Chicken Salad

This first recipe is EXTREMELY low carb, and very delicious. Try putting a
couple of scoops of it over some salad greens, and serve with full-fat ranch
dressing. I would think it should be acceptable even on Atkins induction.
I guess if you wanted to be really careful you could leave out the pecans...
but they really don't add much!

Chicken Salad

---------------

3 cups cooked diced chicken (about 3 chicken breasts) (0 carbs)

6 slices cooked bacon, chopped into small bits (0 carbs)

½ cup celery, chopped (1.5 g carbs)

½ cup pecan pieces (2 g carbs)

Mayonaisse (0 carbs)



Combine first four ingredients. Add desired amount of mayonnaise (probably
about 1 cup).



Total carbs: 3.5 grams


This second recipe has more carbs (not appropriate for induction), but still
not bad and most of the carbs are from fruits, so it should be pretty
healty. I like to eat this chicken salad by itself. I actually got this
recipe from a Pampered Chef recipe book, but I slightly modified it to make
it lower carb. The original recipe uses low fat mayo and low fat yogurt, so
I changed it to the full-fat versions. It also uses two apples, but I've
changed it to just one which is still plenty IMO. Really, I think the
modifications to low carb make it taste better!

Curried Chicken Salad

---------------------

1/2 cup mayo (0 carbs)
1/2 cup plain yogurt (5.5 g carbs)
3/4 tsp curry powder (1 g carbs)
1/4 tsp salt (0 carbs)
3 cups cooked diced chicken (about 3 chicken breasts) (0 carbs)
1 1/2 cups seedless grapes, cut in half (43.5 g carbs)
3/4 cup celery, sliced (2 g carbs)
1/3 cup green onions w/tops, thinly sliced (1 g carbs)
1 Granny Smith apple (13 g carbs)
1/3 cup pecan pieces (1.7 g carbs)



Makes 6 servings

11.3 grams carbs per serving (1 serving = 1 cup)


In small bowl, blend mayo, yogurt, curry powder and salt; set aside.

Dice chicken and cut grapes. Core and slice apple, cut into small pieces.
Chop pecans. Combine chicken, grapes, celery, green onions, apple and pecans
in large bowl. Add mayo mixture; mix lightly. Cover and refrigerate at least
1 hour or overnight.
