Default What's for dinner?

Chicken Vindaloo!

2 tablespooons Patak's Vindaloo paste
2 baked skinless chicken breasts, diced
1 cup canned diced tomatoes, drained
1 cup frozen green peas, cooked
4 medium sized new potatoes, cooked and diced
2 cups white rice, cooked

Makes 4 servings
1 serving = 7.5 points

The "Patak" brand is a line of Indian food sauce mixes, spice pastes and
blends, pappadum mixes, etc. I get mine from an Oriental market in town.

Precook the potatoes and cut into cubes -- I just microwave 'em
Precook the chicken breasts by roasting them in a 325 oven for 25 minutes, then
dice
Microwave the frozen peas
Precook the rice

Heat the Vindaloo paste in a heavy pot and sautee the chicken for three minutes
to heat it through. Put in the tomatoes and the peas and potatoes and let it
simmer for three to four minutes.

Serve over rice.
