First spinach salad with grape tomatoes and half an avocado, cucumber
ranch dressing. Sometimes I add chopped red bell pepper to this, too.

Cut up a zucchini and stirfried it to make "noodles," sauteed some
chicken stir-fry bits, then over the lot of it poured a sauce made
from cheese, half and half, and chipotle Tabasco sauce.

YUM!

Do you make your Margarita from scratch? Next to champagne, it's my
favorite drink.

I *swear* I saw sugar-free liquid margarita base in one of my local
supermarkets, but now I can't find it. So I Dogpiled (I don't like
Google, and Dogpile includes it anyway) and found a sugar-free recipe
that's actually quite easy.

Just basic recipe: juice from one lime (don't roll your eyes now, but I
make mine in a blender, so I throw the whole lousy, peeled lime in),
1/4 cup tequila, and 1/4 cup triple sec (Bols). I guess I could use
orange peel and stevia to replace the triple sec. For now it is one of
my guilty pleasures;O)

Wha'chew got?

Forgot to mention the nearly entire tray of ice cubes that I dump into
the blender as well. I usually have a couple of cubes left over. I get
some razzing about this from some of my younger drinking buddies.

My recipe includes orange extract and Splenda instead:

3 oz. tequila
4 tbl. lime juice (about a whole lime, close enough)
1/2 c. water
2 tbl. Splenda (more or less according to taste)
1/2 tsp orange extract

I like the idea of using the whole lime not having to wash the blender
every time I make a marguerita! I just mix this up right in the glass
and add some rocks.

Everyone at work is going ga-ga over the recipe that includes a
Corona, but it also includes an entire can of frozen limeade, and that
would just push my blood sugar through the ROOF. Not to mention the
terrible cravings I get if I eat sugar.

Thanks for the recipe.

Washing the blender is no big deal. Everything I use is water soluble,
so a couple of rinses, and I let it drip dry.

A beer in the margarita? Guess I'm just a traditionalist.

Dinner tonight is cubed ham with dried fruit in chicken stock, over
brown rice, w/ salad, and fresh fruit.
