Because I like the way they look? They really did taste very good.

Not a problem. I just wanted to make sure you knew they weren't as LC as
the black ones. Some people might assume that all soy beans are LC. If
you enjoy them, go for it! :-)

Well, I said they tasted good, you said they weren't low carb, so I conclude
that you must think things can't be low carb if they taste good. There is
considerable discussion in this thread about the degree of low carbness of
light and dark soybeans, the white or yellow ones are a bit less low than
the black ones but still low enough to fit in most people's carb limit.

I believe that would be me, among others.

Black soy beans. No others are that low. Figure about 2 gms carb in a
cup of cooked beans.

This one kind of bean is low-carb. What, are you gonna tell people not
to even eat naturally occurring low-carb foods now? Should you stop
eating your almonds just because some nuts aren't low-carb?

White ones I think. I don't know how low-carb they are.

I haven't been able to find nutritional information on soybeans by
color. I found that a cup of "mature" soybeans has around 7g net carbs
when you subtract 10g fiber, they have 28g protein, and 15g fat. I
don't know if the "mature" ones are white or black. Whichever these
ones are, having more fiber than other carbs, and having twice as much
fat as carbs, and having 4 times more protein than carbs, I'd say they
look like a good fit for low-carb living. But I can't stand beans.
They're like little bags of kindergarten paste with a skin around 'em.

The point is is that the white/yellow soybeans are higher in sugar
carbs... :-)

And, IMHO, the black have more flavor!
