Here's a link to a PDF that has a lot of info for soy foods including
nutrition facts for beans by colour:

http://www.soyfoods.com/SoyfoodsGuide.pdf

Your analogy is cute and I agree with it for most beans. But as Bob
pointed out, soy beans stay much firmer and don't have that interior
paste-like consistency. You can even get crunchy roasted soy nut snacks,
much like corn nuts, although I haven't tried them.

I haven't been able to find nutritional information on soybeans by
color. I found that a cup of "mature" soybeans has around 7g net carbs
when you subtract 10g fiber, they have 28g protein, and 15g fat. I
don't know if the "mature" ones are white or black. Whichever these
ones are, having more fiber than other carbs, and having twice as much
fat as carbs, and having 4 times more protein than carbs, I'd say they
look like a good fit for low-carb living. But I can't stand beans.
They're like little bags of kindergarten paste with a skin around 'em.

Whether or not it's true, I have to cook for both of us and sprouting
them is not much trouble, so I don't mind!

Not beans, soybeans. And the data tells me so.

This is what I love about this group. Every time someone posts about a
food, or a food experiment, a whole flock of folks find some kind of fault
with it. It's not low carb enough, it will lead you to eating high carb
stuff, it isn't enough of a lifestyle change, blah, blah, blah.

And they won't give those good, manly farts that the guys so enjoy of an
afternoon being couch potatoes watching other guys run around and sweat
on TV.

sigh what's the point of living without good, conflagrational farts.
Megaton-class. Brilliant red flames shooting across the room scorching
the nachos on the coffee table. It's what life is all about... Also
melts the cheese a bit more.

I am not "dieting. I eat no more than 45 g carb/day. I do not exercise. I
have no weight loss goal. I am so happy with life that I do not feel it
necessary to come to a newsgroup to insult people every day.
