Here's a link to a PDF that has a lot of info for soy foods including

But as Bob pointed out, soy beans stay much firmer and don't have that interior paste-like consistency. This is what I love about this group. Every time someone posts about a
food, or a food experiment, a whole flock of folks find some kind of fault with it. It's not low carb enough, it will lead you to eating high carb stuff, it isn't enough of a lifestyle change, blah, blah, blah.
