Recipe - warm spinach salad

Default Recipe - warm spinach salad

Firstly, thank you so much to everyone for the warm welcome (back). It's so
nice to see familiar faces and to meet new ones.

I just had this salad for lunch and I am tempted to run off and marry it. I
like salads, but there's something about a cold dish of vegetables in the
winter that makes me feel like I'm not really having a proper meal. This
salad is warm, filling, and very tasty - all for around 5 UK points (keeping
in mind that salad dressing and turkey bacon points will vary depending on
the brand).

This is somewhat based on a Jamie Oliver recipe, and you could also use
parma ham in the place of the turkey bacon (but remember to factor in any
extra points).

For one person, you need:
-a big plateful of fresh spinach (baby spinach is nice for this salad)
-2 turkey rashers/pieces of bacon
-handful of thinly sliced mushrooms (chestnut mushrooms are nice and have
more flavour than regular button mushrooms)
-Worcester sauce
-1 egg
-1 tbsp. of creamy low cal/low fat salad dressing
-salt and pepper to taste

Boil the egg until it is almost hard (this will take roughly 7-8 minutes)
and sauté the mushrooms in some non-stick cooking spray and a few shots of
Worcester sauce. In the meantime, grill/broil the bacon until very crispy.
When the egg is cooked, place in cold water so that you can handle it to
peel it easily. On the spinach, drizzle the salad dressing, cut up the bacon
into small pieces and sprinkle on top, scatter the mushrooms over the salad,
and then break the egg up into pieces and place on the top. Season the salad
with sea salt and freshly ground pepper. Dat's it!

You could even put this salad on a lovely warm ciabatta roll (for another
2-3 UK points) for a more filling meal.
