Potato Chip Craving
My desire for Potato Chips is gone this morning. Last night I tried Pork
Rinds / Pork Skins for the first time. I had read about them in this group. It is a wonderful very low carb substitute. My only gripe is that the Pork Skins had MSG in them. I should have read that part of the label before attacking the bag, but they were sooo good. MSG tends to make me a space-case for a day. |

Heat a non stick skillet w/ very little oil, dust w/ shredded parmesan cheese about 3 inches in diameter. Cook on high heat, flip when the cheese starts to bubble. It only takes a few seconds, then let lightly brown on the other side. Let cool. They are thin, salty, and crispy. A great chip replacement. (make sure you don't use too much oil, that will ruin them) ~Kat "I think I would like to call myself 'the girl who wanted to be God'. The lightly-browned cheese? I don't think so. Unless you are scraping the cheese off with a metal spatula and eating bits of Teflon. Teflon, if treated normally, does not peel off a pan. If it does, you toss the pan. Heck, I'll get cancer probably from bacon and pesticides first.... Or BSE from eating beef in England in 1992 ;-) Sarah Jahn ----------------------- 32 F, 5'8", 200/197.5/140 Started Atkins Oct. 31, 2003. My only gripe is that the Pork Skins had MSG in them.
Look for a different brand.....both brands that I have (Baken-ets by Frito-Lay and Macs) don't have MSG, just pork skin and salt. Pork rinds are a life saver when it comes to my "salty/crunchy" cravings. |

Cooking products in overheated fats is carcinogenic and there is not a shred of research disproving that. `` These new-fangled fats can cause cancer, heart disease, immune system dysfunction, sterility, learning disabilities, growth problems and osteoporosis: ... All fats heated to very high temperatures in processing and frying'' which is exactly what the original recipe calls for. Well, it actually said "very little oil" over "high" heat. Oil breakdown is easy to see - it smokes. If that happens, toss it. Using a high-temp oil like refined grapeseed. This starts to decompose, or smoke, at 420 degrees F. Unrefined grapeseed has a "smoke point" of 320 degrees. No oil smoking, you're ok to go, and should survive till 105, barring all other causes of death ;-) YMMV.
